I’m excited to share with you guys this “KITTY-LICIOUS” BREAKFAST PANCAKE BAR AND JELLY SYRUP RECIPE I designed for my daughter, Faith’s “Kitty-licious” birthday party sleepover as seen on Hostess With The Mostess this week. If you missed the full post full of party pics and inspiration…click here.
TWEEN BREAKFAST BAR
When planning a sleepover, not only do you have to plan what the kids will do for HOURS, you also have to plan for breakfast the next day! Lucky for me, tweens are very much in that stage of doing things for themselves and cooking they just LOVE! I guess they feel grown-up or something. Anyway, I was more than happy to oblige BUT knew that for safety reasons I wanted them to have a breakfast bar that required no use of the stove and allowed them to make everything themselves! I had to fight the temptation of making everything and laying it all out buffet style. Instead I had to find to make it interactive and pretty at the same time. To get the best of both, I had the girls make the pancakes, jelly syrup and smoothies while I laid out mini-muffins and parfaits on pretty trays.
GIRLFRIEND TIP: Having 6 tween girls in your kitchen at one time trying to make breakfast could end up being a chaotic mess, so to prevent that I broke the girls up into teams of 2 and had them each take charge of a station.
HOW DID SHE DO THAT?
PANCAKE STATION
So, I reused the dining table setup from the party the night before and laid out a Breakfast Pancake Bar…featuring…microwavable frozen pancakes! GASP!!!! I know…I know…there are hard core cooks out there that think microwaving pancakes is mortifying..but let me tell you…they are a busy mom-preneurs BEST FRIEND! For me, they work on multiple levels. One…they are all perfectly sized which makes for a FABULOUS visual presentation on your table design…AND…Two…the girls just pickup their plate of 3 pancakes stacked perfectly and pop them in the microwave! DONE!!!! 2 girls were in charge of this and it worked great!
GIRLFRIEND TIP: I use Eggo brand microwavable pancakes that come 12 to a pack. They are individually wrapped inside the box with 3 per pack. For my party of 8 tweens…I only needed 2 boxes! At around $3 a box…that’s $6 total for pancakes that I didn’t have to do a thing!
SMOOTHIE STATION
The other 2 girls were in charge of making the smoothies. I have two blenders on hand so the girls were able to make two different flavors. Target has the best frozen smoothie packets that already come with the fruit and the smoothie mix inside so all the girls had to do was open the packet, put it in the blender, add apple juice and blend. Super easy! No washing and cutting up fruit…love it!
GIRLFRIEND TIP: Fruit isn’t in season all year round, so I always keep frozen smoothie mixes on hand to make smoothies any time of year. The frozen smoothie mixes also helps add a slushy consistency to the smoothies without having to add a bunch of ice which waters down the flavor!
JELLY SYRUP STATION
To top of the girls’ pancakes, I set up a Jelly Syrup station where the remaining 2 girls made 3 flavors of syrup….Strawberry, grape and peach. It’s so easy it is ready in 3 steps and 1 minute! Have you ever heard of jelly syrup? Probably not as I made this up myself years ago and have been making it for my kids and myself ever since! I learned my lesson of buying an entire bottle of expensive flavored syrup just to get it home and the kids don’t like it…such a waste. My kids happen to love jelly though but it’s hard to put jelly on pancakes and it’s cold! So….one weekend morning I was experimenting and came up with this yummy recipe for Jelly Syrup which is just what it sounds like…Jelly in the consistency of syrup!
GIRLFRIEND TIP: The great thing about making this is you can make as much as you want at a time so you don’t have to commit to an entire bottle of syrup. You can make individual portions. The kids LOVE it and it’s made with jelly that we already keep on hand in the house anyway. Below I show you how to make enough using an entire jar of jelly, but you can use just a few tablespoons of jelly and butter to make individual portions.
JELLY SYRUP RECIPE:
HERE’S WHAT YOU’LL NEED TO MAKE IT:
– 20 ounce container of jelly (any flavor you like)
– 1/2 stick of butter
3 STEPS & YOUR DONE!
Step 1: put all the jelly & butter in a microwave-safe dish
Step 2: microwave the mixture on high for 1 minute
Step 3: remove from the microwave and whisk together until smooth
That’s it! A tasty sweet topping for pancakes and waffles! I even use it as dipping sauce for croissants! Since the syrup already has butter in it, there’s no need to have to put butter on your pancakes.
GIRLFRIEND TIP: You can store any unused jelly syrup in a container in the fridge just like you would regular jelly!
