Hey party peeps! May is my birthday month and guess what? I’m STILL celebrating! That’s right..it’s fiesta time and tonight for dinner, I’m making this yummy Southwest Baked Spaghetti! I make Baked Spaghetti for my family frequently and give it a little extra kick, I’m putting a southwest spin on it by adding RO*TEL diced tomatoes & green chilies. I love to substitute plain canned diced tomatoes with RO*TEL tomatoes to give my recipes it a southwest flavor. It’s a great way to add a spicy twist to some of my recipes.
GIRLFRIEND TIP: If your family doesn’t like spicy, then you can substitute the mild version of the RO*TEL canned tomatoes.
HERE’S WHAT YOU NEED
To make this yummy Southwest Baked Spaghetti, you’ll need these ingredients:
– 1 lb. ground beef
– 1 28 oz. can RO*TEL original or mild diced tomatoes & green chilies (or 2 single size cans)
– 1 jar marinara sauce
– 1 8 oz. pack shredded Monterey Jack cheese
– 1 8 oz pack shredded Mexican four cheese blend
– 1 box of linguini
– 1 tsp season salt
– 1 tsp garlic powder
– 1 tsp cumin
– 1 tsp coriander
– salt & pepper to taste
HERE’S HOW TO MAKE SOUTHWEST BAKED SPAGHETTI
LET’S MAKE THE MEAT SAUCE
STEP 1: Preheat the oven to 350 degrees. Brown the ground beef in a deep pan. Add garlic powder and season salt to the ground beef while it’s browning. When fully browned, drain off the oil.
STEP 2: Add the RO*TEL diced tomatoes, the jar of marinara sauce, season salt, garlic powder, cumin, coriander, salt and pepper to the pan. Stir and simmer on low for 20 minutes until hot.
NOW LET’S COOK THE PASTA
STEP 3: Bring a large pot of water to a rolling boil. Add salt to the water and stir. Add the entire box of linguini to the boiling water. Cook according to the package instructions until done. Drain.
GIRLFRIEND TIP: Put a lid on your pot to bring the water to a boil faster.
STEP 4: In a 9×12 glass baking dish or individually portioned glass baking dish (as shown), spread one ladel of meat sauce in the dish to lightly cover the bottom. Then add a layer of pasta.
STEP 5: Cover the pasta with another layer of sauce and then cover with one layer of the shredded Monterey Jack cheese then another layer of the Mexican four cheese blend.
STEP 6: Repeat an additional 2 times to create 3 layers. The final layer should be cheese. Put the dish in the oven and bake for 30 minutes.
GIRLFRIEND TIP: To keep the cheese on top from getting too brown, lightly cover the pan with aluminum foil for the first 10 minutes. Then remove the foil and continue to bake an
additional 20 minutes until the cheese is melted and the sides are bubbly.
HAVING A PARTY?
I love making this for parties too! Instead of assembling your baked spaghetti in one 9×12 pan, use individual sized baking dishes instead. That way each guest has their own portion and there’s no need to scoop some out for everyone which can sometimes get messy.
