Hey party peeps! It’s FALL Y’ALL! And you know what that means…all the seasonal fall flavored everything will be hitting store shelves! One of my favorite parts of fall is enjoying all the fall flavors. I love how they are seasonal so it gives me something to look forward to. Now, let’s get real for a minute…if you’ve been following me for a while, you know that nothing makes me happier than a hot cup of coffee and an amazing cupcake! I mean, seriously, it takes me to my happy place. You have got to try this REESE’S Peanut Butter Cup Cupcakes recipe—you will thank me! CLICK HERE for more fall recipe ideas.
The other day I was shopping at Walmart and came across International Delight’s new fall flavored creamers—International Delight® Pumpkin Pie Spice and International Delight® REESE’S Peanut Butter Cup! WHAT???!!!! REESE’S Peanut Butter Cups are my all time favorite candy and Pumpkin Pie Spice, inspired by pumpkin pie, is a staple for fall, so…HELLO…I had to have them both, of course. I may have bought a few of each…I know…I know, but girls, you better stock up because these are only available for a limited time through the holiday season.
I tried it in my daily (okay, multiple times a day) cup of coffee and seriously…who wouldn’t want the taste of a REESE’S Peanut Butter Cup in their coffee! It is amazing.
It was so good, that I decided to whip up a batch of my REESE’S Peanut Butter Cup Cupcakes where I replaced International Delight® REESE’S Peanut Butter Cup creamer for the milk and WOW! They are delish! Want to see how to make them? Let’s get started.
HERE’S WHAT YOU NEED
– 2 cups flour
– 1/2 tsp salt
– 2 tsp baking powder
– 1 stick softened salted butter
– 1 cup sugar
– 2 eggs
– 1 cup International Delight® REESE’S Peanut Butter Cup
– 1 tsp vanilla extract
– 1 bag of Miniature REESE’S Peanut Butter Cups
– 1 can of vanilla icing
– 1 icing pastry bag
– 2A icing tip (round)
– cupcake liners (plain and gold)
HERE’S HOW TO MAKE REESE’S PEANUT BUTTER CUP CUPCAKES
STEP 1: Preheat oven to 350 degrees. In a large mixing bowl, whisk together all the dry ingredients (flour, salt, baking powder, sugar)
STEP 2: In a separate bowl, whisk together the eggs, vanilla extract and International Delight® REESE’S Peanut Butter Cup creamer.
GIRLFRIEND TIP: I normally make this with International Delight® Vanilla creamer, but you could also add different flavors of creamer at this step. How yummy would this be with International Delight® Pumpkin Pie Spice creamer? YUMMY!
STEP 3: Add the softened butter to the dry ingredients and using a fork, cream the butter into the flour mixture.
STEP 4: Put the flour mixture in a mixing bowl with the wet ingredients and mix on medium until smooth.
STEP 5: Fill the cupcake pan with cupcake liners. Fill each of the cupcake liners 3/4 of the way full with the batter.
STEP 6: Place one Miniature REESE’S Peanut Butter Cup down into the middle of each cupcake. Bake for 23-25 minutes.
STEP 7: Remove from the oven and sit them aside to fully cool.
STEP 8: Snip off the tip of an icing bag with scissors and place a 2A icing tip into the bag until it fits snugly in the corner. Place it in a tall glass folding over the excess and fill it with the can of vanilla icing.
STEP 9: Remove the bag from the glass and squeeze the icing down into the tip. You can secure the open end of the bag with a twist-tie if you want. Frost your cupcakes starting at the outside and working your way to the center, pulling straight up when you reach the middle.
STEP 10: Top each cupcake with one Miniature REESE’S Peanut Butter Cups.
STEP 11: To add some color to your cupcakes place them into a colored cupcake liner like these gold metallic liners that give them a glam fall feel.
GIRLFRIEND TIP: Want to make Mini REESE’S Peanut Butter Cup Cupcakes? Simply bake them in a mini muffin tin and don’t put the REESE’S Peanut Butter Cup in the cupcake batter. Instead, when they are done, top each with a REESE’S Peanut Butter Cup. Now you have a mini yummy snack. These are perfect for parties too!
That’s it! This REESE’S Peanut Butter Cup Cupcakes recipe will make approximately 16 cupcakes or 32 mini cupcakes. Enjoy with a hot cup of coffee with International Delight® REESE’S Peanut Butter Cup creamer. THE BEST!
