It’s 2016 and I don’t know about you, but when I was making my resolutions for the new year, I had to admit that dinner time in my house needed a bit of a makeover! Last year, dinner would stress me out! I work from home, but was so busy last year, that dinner was never top of mind for me until right at 5pm when the kids would ask that dreaded question, “What’s for dinner?” I would sometimes just stand there with a blank expression on my face while thinking “I have NO idea and nothing has been thawed out to cook!” Then I would just smile and say that magic word that brings a smile to all kid’s faces…”PIZZA!” It got so bad that my poor kids didn’t even want pizza anymore and I admit I was packing on some extra pounds. So, this year, I’ve resolved to reset my diet with my family and try to work on figuring out a happy work/life balance so that I won’t be so busy that dinner time is no longer enjoyable. I love cooking, but realistically, don’t have time to cook elaborate full course meals for my family. I needed some shortcuts while still serving a healthy balanced meal to my family. I was determined to implement a few new strategies this year: 1. Find time-saving tips when preparing dinner 2. Find a few new healthy & quick recipes that would include more fruits and vegetables 3. Find ways to decrease our portion sizes to keep those extra pounds at a minimum
DINNERS ARE NOW A BREEZE!
During a recent trip to Target, I came across an entire case of heat-and-serve meals like fajitas and stir fry which included rice, pre-cut fresh vegetables and pre-cooked chicken breast along with your choice of sauces. This was what I was looking for—a complete dinner already prepped and ready to go. So even after a busy day at work, I could prepare my family a healthy meal within 15 minutes. Stir fry was perfect! It’s quick and healthy! I picked up a few of these, a pack of pre-cooked chicken, a packet of sauce and was on my way in only a few minutes.
ENTERTAINING MADE EASY & HEALTHY WITH A STIR-FRY BAR!
Create self-serve food bars in a hurry using pre-cut vegetables and pre-cooked foods at your next party. Here you can see how I used a few items I found in Target like these wooden trays and bowls and mixed them with bright white, modern mini bowls to hold the veggies and mini pitchers to hold the teriyaki sauce. The combination of the wood and the bright white serveware gives the bar the modern Asian feel I was going for. Guests can fill their own bowls and then quickly cook their own stir-fry meals. A fun touch to your party. Add fun touches like chopsticks and a wooden frame with “Stir Fry Bar”. GIRLFRIEND TIP: This is also a fun way to serve stir-fry to your family too. My kids get excited whenever I lay out all the food in a buffet style like this where they can assemble their own meals.
YOU CAN STILL HAVE DESSERT!
These mini serving bowls are just the right size to hold one scoop of ice cream. The bowls in our house are much larger and encourage us to serve multiple scoops of ice cream in them. By using mini bowls like these, which I picked up from Target, we can decrease our portion sizes, helping to prevent packing on extra pounds. I’ve seen those sauces at Target but never tried them. I’m going to try this. I love the bags of steamed veggies Target has that you just need to pop in the microwave for a few minutes. Those are great too!

I love Archer Farms products, I did not know they offered this in stir fry. What a great idea to set out a bar for a stir fry, my family would enjoy this.

I have never made a stir fry bar for my family. They like soup bar and potato bar so this would probably go over well.

Was this an electric wok – or did you cook everyone’s to order by the stove? I love this idea, my kiddos love these types of restaurants, I just never thought to try this at home.

I don’t think I’ve seen those at my Target but then again I haven’t really looked. I however would love to make my own stir-fry meals instead of buying it. Will be checking this out.
