Hey party peeps! You know that saying…April showers bring May flowers…well, May also happens to be the month of my birthday, my Mom’s birthday, my Mom-in-law’s birthday, my daughter’s birthday AND Mother’s Day! You know what that means…BRING ON THE FUN! My husband told me that when he was younger, he would celebrate his birthday all month, so I decided this year I would try to do a little something for myself all month long—starting with hosting a fiesta with my friends featuring this Modern Fiesta Chili Bar featuring my Southwest Chili Recipe! This party is easy to set up and the chili is easy to make which makes it perfect to serve at your fiestas this month.
So, I have to tell you this story. My husband and I went out to dinner for my birthday last night and as we were getting ready to leave, in walks my sister and my best friend who live in another state and I haven’t seen in almost a year! I was shocked! I just kept staring at them like I was seeing things. THE BEST BIRTHDAY GIFT EVER! My husband arranged it all without me knowing a thing!
Today, we are celebrating with my famous Southwest Chili and a last minute fiesta with my girlfriends! A quick trip to Walmart to grab the ingredients and we’re all set.
HERE’S WHAT YOU NEED
To make this yummy Southwest Chili, you’ll need these ingredients:
– 1 lb. ground beef
– 1 can RO*TEL Mexican style diced tomatoes with lime & cilantro
– 1 can RO*TEL mild diced tomatoes & green chilies
– 2 cans black beans
– 1 can pinto beans
– 1 cup chicken broth
– 2 packets of chili seasoning
– 1 red onion
– 1/2 tsp garlic powder
– 1/2 tsp cumin
– 1/2 tsp coriander
– salt & pepper to taste
– toppings (sour cream and shredded Mexican blend cheese)
HERE’S HOW TO MAKE IT
STEP 1: Brown the ground beef in a deep pot or dutch oven pot. When fully browned, drain off the oil.
STEP 2: Dice the red onion and add to the pot along with both packets of chili seasoning and the chicken broth. Cook on medium heat for a few minutes stirring frequently.
STEP 3: Add both cans of RO*TEL diced tomatoes and stir.
STEP 4: Add 2 cans of black beans and 1 can of pinto beans and stir.
STEP 5: Add the garlic powder, cumin, coriander, salt and pepper. Cover and simmer on low heat for 20 minutes stirring occasionally.
GIRLFRIEND TIP: If serving this for a party, you could make this the day before and then just reheat it on low heat a half-hour before your party.
SET UP A MODERN FIESTA CHILI BAR!
While your chili is cooking, it’s time to set up your Modern Fiesta Chili Bar! I love designing parties with a modern twist. For this Modern Fiesta, I decided to use a color palette of bright white, green and turquoise with pops of gold! I know, I know, not the traditional fiesta colors, but I LOVE how it looks and reminds me of a Mexican vacation I took with the colors of palm trees, blue seas and sunshine!
When setting up a last minute party, I look around my house first before buying a thing! I also use my existing furniture to use as display tables so I don’t have to bring in additional tables. I have this table and shelves in my house already, so I simply replaced some of the decorations that I had on it with a few tropical inspired pieces I already had around my house like these modern gold and white pineapple decor pieces, potted faux palm leaf plants and a small throw pillow with a modern tropical floral print. To add a Mexican touch I hung a modern white fiesta paper cutout garland above the table and added in these super cute faux potted cactus plants. DONE!
GIRLFRIEND TIP: When on a budget, use fruit to decorate with. Here I filled dessert trays with limes that matched my table’s color palette perfectly. How cool is that! AND…you can use the limes during your fiesta to garnish your margaritas!
SERVE YOUR CHILI IN MARGARITA GLASSES!
For a fun touch, serve your Southwest Chili in margarita glasses and display the toppings! Your guests can fill their glasses with the yummy chili, top it with cheese and sour cream and be able to walk around the party with their own individual portions. AND…seriously…how cute are these!
